
Choshu Shuzo launched the Tenbi brand in 2020 in Shimonoseki, Yamaguchi, rebuilding a new kura on the site of the 150-year-old Kodama Shuzo using its original materials and well water. The venture was shaped by the hire of toji Fujioka Miki, who had previously overseen production at celebrated breweries Kawatsuru (Kagawa) and Zaku (Mie), and who is one of Japan's few female sake masters with a national reputation. The Tokubetsu Junmai Karaten uses Yamada Nishiki for the koji rice and Saito no Shizuku, a Yamaguchi-bred rice variety, as the main brewing rice, polished to approximately 60% and pasteurized once. Within three years of its debut Tenbi had become a benchmark for the new wave of Yamaguchi sake, balancing bright fruit and textural depth.
