Shinanotsuru Junmai Muroka Namagenshu uses Miyama Nishiki polished to 60%, released unfiltered and unpasteurized at full strength from Chouseisha Syuzo in Komagane City, Nagano. As the first Shinshu brewery to commit entirely to junmai brewing (2001), this genshu expresses the full natural intensity of 100% locally grown Miyama Nishiki.
