Tsunetoyo (Tsuneyutaka) is a rare Ibaraki rice revived from seed stock at Kyushu University, its name expressing the wish for lasting prosperity in the Hitachi region. Polished to 55% and brewed with Tokyo University of Agriculture short-fermentation yeast, it offers subtle aromas and a clean, smooth palate with a fruity, refreshing finish.
