Ogosebairin Daiginjo uses Yamada Nishiki polished to 40%, submitted to competition and bottled by Sato Shuzoten in Ogose, Saitama. The brewery draws on clear subterranean water flowing from the Koyasan mountain stream and uses hand-crafted methods to pursue a sake with body and a light, clean finish.
