Made with wild yeast isolated from the Kiso Valley by Nanawarai Shuzo in Nagano, this junmai nigori is brewed with Mt. Ontake watershed water and bottled cloudy to preserve natural fermentation character. The brewery, founded in 1892, pursues what it calls umakuchi, a richness of flavor that goes beyond simple sweet-dry categorization.
