Nagano-grown rice polished to 65% and spring water from Mount Yokogawa form the base of this honjozo kizake (undiluted sake) from the Miwatari range, produced at the Okaya brewery established in 1867. The brewery uses eight or more varieties of Nagano rice and focuses on young brewer-led craft with all ingredients sourced from within the prefecture.
