Matsunotsukasa Junmai Ginjo Ryuouyamadanishiki uses Yamada Nishiki rice grown under contract specifically in Ryuo Town, Shiga, the same town where Matsuse Shuzo has brewed since 1860, creating a hyper-local expression where the rice and the brewery share the same soil. The ginjo-grade polishing and pure-rice fermentation allow the specific character of Ryuo-grown Yamada Nishiki, shaped by the town's mineral-light water and fertile agricultural land near Lake Biwa, to express itself fully. This terroir-focused sake represents the brewery's commitment to farming the very land it calls home.
