Matsunotsukasa Junmai Ginjo Nakadori selects only the middle fraction of each pressing run, the nakadori or nakagumi cut, which yields the purest, most balanced portion of sake free from the stronger flavors found in the first and last fractions. Matsuse Shuzo in Ryuo Town, Shiga, applies this selective bottling to junmai ginjo-grade rice, producing a sake of particular cleanliness, with a centered, harmonious balance of fruit, rice umami, and acidity. The nakadori fraction represents the ideal middle ground of the pressing, making this one of the most refined expressions in the standard Matsunotsukasa lineup.
