Matsuse Shuzo in Ryuo Town, Shiga, applies this single-fraction bottling to junmai ginjo-grade rice, bottling the arabasiri directly without further blending or adjustment to preserve its bold, unrestrained character. The result is a sake with more assertive flavor, a natural mild cloudiness, and the youthful intensity associated with the very start of the pressing cycle.
