Yamada Nishiki is polished to daiginjo level and brewed with the ultra-soft Todonomori spring water, producing a junmai daiginjo with a delicate ginjo fragrance and a layered, fine-grained rice umami. Long, low-temperature fermentation and careful hand-crafting in the Niigata tanrei style result in a clean, refined finish.
