Koshinokagetora Daiginjo is brewed with water from the nationally designated Todonomori spring in Nagaoka, Niigata, an exceptionally soft source at hardness 0.47 that contributes the brand's hallmark smooth, rounded character. Bag-pressing collects the sake drop by drop, and the resulting style is clean and fragrant with a refined dry finish.
