Kaika Junmai Ginjo Kurobin (Black Bottle) uses Gohyakumangoku polished to 53% from Daiichi Sake Brewery in Sano City, the oldest sake brewery in Tochigi (founded 1673). The brewery grows its own rice and uses a top-100 Japanese famous water source, applying the traditional kimoto method for lactic depth in this reliable pasteurized ginjo expression.
