Junmai Ginjoshu Minamitaiheiyo from Kisuki Shuzo in Shimane takes its name from the southern Pacific Ocean, a geographical reference that contrasts with the brewery's location on the Sea of Japan coast, suggesting a sake of broad horizons and open, expansive character. Brewed without added alcohol and with rice milled to at least 60 percent, this junmai ginjo delivers the moderate, clean aromatics associated with Shimane's San'in brewing tradition. The brewery draws on the clear water of the Hii River basin, historically linked to the iron sand and mythological tradition of the Izumo region, to produce a grounded, flavorful sake.
