Joumonnohibiki from Uonuma Shuzo takes its name from the Flame-style Jomon pottery excavated near the brewery in Tokamachi, Niigata. The brewery, known for its umami-forward approach within Niigata's predominantly dry sake landscape, draws on cold winters and deep-snow country conditions for its fermentation.
