Kitashizuku rice, a Hokkaido-developed brewing variety, is polished to 60% for this undiluted honjozo genshu from Niseko Shuzo in the Niseko ski resort area of Hokkaido. Kitashizuku was developed by the Hokkaido Prefectural Agriculture Research Center specifically for the island's cold brewing conditions.
