Homei Junmai Ginjo Honnamashu from Houmeishuzou in Hyogo is a once-pasteurized sake, heated at filling but not during storage, which preserves a fresher, more vibrant character than conventionally twice-pasteurized sake. The ginjo-grade polishing, with rice milled to at least 60 percent, contributes a light, fragrant aroma with fruit-forward notes typical of the ginjo class. This Tanba-Sasayama expression balances the brightness of nama sake with slightly greater stability, making it an accessible introduction to the Homei lineup.
