Hayaseura Daiginjo Shizukushu is a drip-pressed sake from Miyakehikoemonshuzo in Mihama, Fukui, where only the finest liquid allowed to naturally drip from cloth-suspended mash bags is collected. This gentle funa-shibori technique preserves the most delicate aromas and flavors, yielding an extraordinarily pure daiginjo from one of Fukui's oldest breweries.
