Hayaseura Daiginjo is the premium expression from Miyakehikoemonshuzo, a brewery established in 1718 along Wakasa Bay in Mihama, Fukui Prefecture. Mineral-rich spring water from the bay's inlet drives a characteristically dry, vigorous fermentation, resulting in a daiginjo with a clean, sharp profile and impressive refinement.
