Yamada Nishiki polished to 35% forms the base of this junmai daiginjo genshu from Enoki Shuzo in Kure, Hiroshima. Named Kichijōsō after a plant said to bring good fortune when it blooms, it is bottled undiluted to preserve the full concentration of the rice's character.
