
A ginjo from this Kanazawa brewery, founded in 1868 and named for its founding location in the former village of Gosho. Made with Yamada Nishiki and Gohyakumangoku rice polished to 55%, using soft Hakusan mountain spring water. The profile is lean and dry with a broth-like depth and faint chocolatey nuttiness rather than overt fruit.
