Dewazakura Tokubetsu Junmai Yoito (よいと) uses Dewa Sansan, the sake rice Dewazakura co-developed with Yamagata Prefecture, polished to 55%. Yoito is a Yamagata dialect exclamation of enthusiasm, and this Tokubetsu Junmai from the two-time IWC Champion brewery captures the enthusiastic, forward-looking spirit of Yamagata's modern sake culture.
