Dewazakura Oka (桜花) Ginjo Yamada Nishiki is the brewery's signature Oka Ginjo using Yamada Nishiki polished to 50%, from Dewazakura in Tendo City, Yamagata. As the sake that launched Japan's ginjo revolution when released in 1980 as Japan's first commercial ginjo, Oka (cherry blossom) remains the brewery's defining expression, named after the blossoms of Maizuruyama hill.
