
Dai Shinshu Tenouchi (手の内), meaning what one holds in hand, uses Kinmon Nishiki in a Junmai Ginjo from Daishinshu Shuzo in Nagano. The name evokes the brewery's fully handcrafted philosophy , every element held and controlled by human hands , using self-cultivated yeast and Northern Alps snowmelt well water to bring out Kinmon Nishiki's local character.
