Chitosetsuru holds the distinction of being the first and only sake brewery in Sapporo, founded in 1872 as Shibata Shuzoten. The brewery draws on Hokkaido's pristine snowmelt and deep underground water, and the region's cool northern climate restrains fermentation naturally, yielding a characteristically clean, dry, refreshing style suited to Hokkaido's particular terroir. Shinshushiboritate, meaning new-season fresh press, is a seasonal release capturing the very first pressing of the year: bottled unfiltered and unpasteurized immediately after fermentation, it is lively and vibrant, with a fresh aroma, bright acidity, a light rice sweetness, and a crisp, invigorating finish that cannot be replicated once the season has passed.
