Nippon Seishu, founded in 1872 as the first sake brewery in Sapporo and today the only one remaining in the city, has earned Gold Medals at the National New Sake Appraisal for fourteen consecutive years. Brewed with soft underground water drawn from the Toyohira River aquifer and Miyamanishiki rice suited to Hokkaido's cool northern climate, the Daiginjo achieves a refined, fruit-forward character that Sapporo's cold winters are uniquely equipped to produce. Polished to at least 50%, it opens with delicate floral aromas and fresh fruit, leading into a silky, elegantly balanced palate with light sweetness and a clean, unhurried finish.
