Atsumakawa Junmai Daiginjo is a premium pure rice daiginjo from Kinteki Shuzo in Hokkaido, named for the Atsuma river system that supplies the brewery's brewing water. Hokkaido's subarctic climate enables long, slow fermentation at low temperatures, a condition ideal for developing the delicate fruity aromas associated with daiginjo sake. The junmai daiginjo classification requires high polishing ratios and the exclusive use of rice without additional brewer's alcohol.
