Akishika Shuzo uses Hattannishiki rice, a variety known for yielding well-balanced, aromatic sake, in this funashibori-pressed namazake from its home in Nose, Osaka. The brewery's commitment to organic, estate-grown rice and the absence of charcoal filtration allows Hattannishiki's subtle, slightly earthy character to come through unobstructed in an unpasteurized release.
