Kimpyoushirakoma Daiginjo is the flagship premium expression from Nakagawa Shuzo in Noto, Ishikawa, with rice polished to at least 50% to achieve the refined fruity aromas and elegant texture defining the daiginjo grade. Daiginjo production requires low-temperature ginjo-style fermentation and exceptional milling precision, representing the summit of the brewery's craft. The cold climate and clean mineral water of the Noto Peninsula support the extended, careful fermentation that daiginjo quality demands.
