At the junmai ginjo level, the rice is polished to at least 40 percent, offering an accessible entry into Kitaya's aromatic, water-forward style without the extreme refinement of the daiginjo tier. The emphasis on pure mountain water as a flavor driver reflects Fukuoka's broader terroir-conscious brewing culture.
