Tomio Daiginjo Tarekuchigenshu is an undiluted, direct-draw daiginjo from Kitagawahonke, captured at the point of pressing without the dilution that most sake undergoes before bottling. The tarekuchi method yields an intensely concentrated expression of the daiginjo fermentation, with pronounced fruit aromatics and a full, rich body at natural alcohol strength. Fushimi's soft water provides structural smoothness to what is otherwise a bold and expressive sake.
