This namachozo process, which differs from standard honjozo by avoiding the first pasteurization step, preserves a fresh, slightly lively character while still providing stability for distribution. The small addition of distilled alcohol typical of honjozo production complements the fresh quality that the unpasteurized storage imparts to this Gunma sake.
