A namachozo-style Junmai Ginjo using Dewa Sansan rice, stored unpasteurized and only heat-treated once before shipment to preserve a vibrant, lively quality. Arashiyama Shuzo uses the cold Yamagata winters to slow-ferment and refine the sake's delicate aroma.
