Kujira Nakadori Namazake is the prized middle-run cut of the pressing, collected separately for its superior balance of aroma and flavor. From Chiyoshuzou in Nara's Katsuragi area, this unpasteurized Junmai Ginjo of the Kujira label uses estate-grown Yamada Nishiki and the clean subsoil water of Mount Katsuragi for a fresh, expressive namazake.
