Description
Yamada Nishiki forms the base of this daiginjo from Kamihei Shuzo (Kamihei Shuzo Co., Ltd.) in Tono, Iwate, named Kappa no Nusumi-zake after the folklore spirit of the region. Tono is one of Japan's most famous folk-tale towns, and the brewery uses soft spring water from the foothills of Rokugōushi Mountain for all brewing.
