Description

Junmai Daiginjo Kansansui from Kitaya Co., Ltd in Fukuoka takes its name from the 'cold mountain water' (kansansui) of the Asakura region, where the brewery sources its exceptionally pure brewing water. As a junmai daiginjo, the rice is polished to at least 50 percent, and no distilled alcohol is added, allowing the mineral-rich water and refined rice to define the flavor. This water-focused naming underscores the terroir-driven philosophy behind Kitaya's premium offerings.
