This Anaze Junmai Ginjo from Kitagawahonke uses Gohyakumangoku rice, a variety prized for producing clean and light sake with subdued earthiness. Brewed in Fushimi, Kyoto, with the region's famously soft water, it develops a crisp, refreshing profile typical of this rice variety. The no-added-alcohol formulation allows the inherent character of Gohyakumangoku to come through clearly.
