Unzennokagayaki, meaning 'radiance of Unzen', is a Tokubetsu Junmai from Aimusume Shuzo that pays direct homage to Mount Unzen, the active volcano at the heart of Nagasaki's Shimabara Peninsula. The brewery uses water drawn from the volcanic mountain's filtration system, which carries a distinctive mineral profile that shapes this sake's clean, slightly firm structure.
