Bottled after a single gentle pasteurization in the bottle (binkan hi-ire), this junmai from Toyokuni Shuzo retains more freshness than conventionally heated sake while still achieving stable quality. The brewery's use of local contract rice and all-fune pressing gives it a soft, round mouthfeel.
