Honjozo from Suisenshuzou in Kochi Prefecture, a region historically renowned for producing some of Japan's most assertively dry sake. The addition of a small amount of distilled alcohol in honjozo brewing lightens the body and sharpens the crisp finish characteristic of the Kochi style.
