Gohyakumangoku from Gunma's Meiwa district milled to 55%, bottled as unfiltered raw sake for this 9th vintage release. Brewed in batches of 600kg or less at Shimizuya Shuzo with fermentation extending up to 34 days, it shows high acidity of 2.5 alongside peach and citrus aromas that develop with time.
