Whole ume plums are steeped in this junmai-based umeshu brewed at 80% polish, allowing the sake's rice umami to provide a rounder, less spirit-forward base than typical distilled-alcohol plum wines. Murashige Sake Brewery's Kinkankuromatsu line draws on Iwakuni's dual water sources, which shape the underlying sake's character.
