Jokigen Namachozoshu Ryoujun is a junmai sake from Kano Shuzo in Ishikawa Prefecture produced using the namachozo method, in which the sake is stored unpasteurized and only pasteurized once before bottling. This technique preserves a freshness and subtle enzymatic complexity not found in fully pasteurized sake, highlighting the brewery's refined Kaga-region style.
