Brewed in 1986 as a honjozo from Nippon Bare rice at 70% polish, this vintage marked the year a new toji took charge at the brewery. Room-temperature aging in the Gifu storehouse produces a dry entry that opens gradually into layered umami, reflecting both the change in brewing leadership and the transformative effect of long maturation.
