Made in 1984 as a junmai from Nippon Bare rice at 70% polish, this vintage undergoes room-temperature aging in the earthen-walled storehouse in Gifu. Soft subterranean water from the Mujigawa River, a tributary of the Nagara River, contributes a round mouthfeel to the base, which deepens over decades into the rich, amber koshu characteristic of this brewery.
