Darumamasamune
Shiraki Tsunesuke Shoten, fundada en 1835 en Gifu City, tomó la decisión fundamental en 1971 de especializarse casi exclusivamente en sake envejecido, o koshu, en un momento en que ninguna otra cervecería japonesa seguía este camino con seriedad. Darumamasamune envejece a temperatura ambiente en almacenes de tierra que alternan de forma natural entre cuatro grados en invierno y veintiséis grados en verano, acelerando la lenta maduración oxidativa que otorga al sake su tono ámbar y su compleja profundidad. La cervecería ofrece añadas de tres a diez años, así como mezclas que incorporan sake de las décadas de 1970 y 1980.
