Amabuki
A Amabuki Shuzo, estabelecida há aproximadamente 300 anos na Prefeitura de Saga, ao pé do Monte Amabuki no norte de Kyushu, é hoje a única cervejaria de sake no Japão que produz toda a sua linha utilizando leveduras cultivadas a partir de flores. Os irmãos Sotaro e Daisuke Kinoshita descobriram essa abordagem enquanto estudavam na Universidade de Agricultura de Tóquio e, retornando à cervejaria da família no início dos anos 2000, transformaram toda a produção usando mais de dez leveduras de flores distintas, juntamente com arroz da Planície de Saga cultivado localmente e água suave do Monte Sefuri. Embora cerca de 30 das 1.300 cervejarias do Japão experimentem com levedura de flores, Amabuki é a única que se compromete com ela em todas as suas expressões.

Hard to imagine from the cute label, but this was the driest, crispest sake I’ve ever had. Exactly my kind of taste. Honestly, this sharp dryness might pair better with sushi than a richer, more aromatic style. A sake you can keep drinking all through the meal.
