Amabuki
Amabuki Shuzo, establecida hace aproximadamente 300 años en la prefectura de Saga al pie del monte Amabuki en el norte de Kyushu, es hoy la única cervecería de sake en Japón que elabora toda su gama utilizando levaduras cultivadas a partir de flores. Los hermanos Sotaro y Daisuke Kinoshita descubrieron este enfoque mientras estudiaban en la Universidad de Agricultura de Tokio y, al regresar a la cervecería familiar a principios de los años 2000, transformaron toda la producción utilizando más de diez levaduras florales distintas junto con arroz de las llanuras de Saga cultivado localmente y agua blanda del monte Sefuri. Aunque aproximadamente 30 de las 1.300 cervecerías de Japón experimentan con levaduras de flores, Amabuki es la única comprometida con ello en todas sus expresiones.

Hard to imagine from the cute label, but this was the driest, crispest sake I’ve ever had. Exactly my kind of taste. Honestly, this sharp dryness might pair better with sushi than a richer, more aromatic style. A sake you can keep drinking all through the meal.
