Amabuki Shuzo, fundada en 1688 en la prefectura de Saga al pie del monte Amabukiyama, ha dedicado las últimas dos décadas a ser pionera en el uso de levaduras de flores desarrolladas en colaboración con la Universidad de Agricultura de Tokio. Este junmai ultra-seco (chokarakuchi) se pasteuriza una sola vez (ikkaihiire), preservando un carácter luminoso y vivo mientras el proceso de pasteurización única mantiene la frescura y los sabores complejos centrados en el arroz.
