Founded in 1804 in Katsuyama, a historic brewing town in northern Okayama long known as Umasake no Kuni — the land of fine brew — Tsuji Honten has been committed to junmai sake for over four decades, well before it became fashionable. The brewery is guided by Maiko Tsuji, Okayama's first female toji and the seventh generation of her family, who has revived the ancient Bodaimoto fermentation method and champions locally grown Omachi rice.
