A cervejaria pratica a filosofia de 'produção de sake a partir do cultivo do arroz', trabalhando em parceria com agricultores locais para cultivar arroz melhor, com 100% do arroz proveniente da prefeitura de Niigata. Localizada na latitude 38 graus norte, em Fujitsukahama, cercada por belas florestas de pinheiros e pelas ondas agitadas do Mar do Japão, existe o 'Poço Fuji', que há muito tempo abastece a região. Desse ambiente nasceu o sake 'Fujinoi'. Os resultados incluem vários Prêmios Ouro, incluindo o prêmio máximo na Avaliação de Sake do Escritório Tributário de Kanto-Shin-Etsu.

1867
Founded during the final year of the Edo period (Keio 3). Local resident Masataro began sake brewing and trading in the coastal village of Fujitsukahama, taking advantage of the area's favorable conditions for brewing and commerce.
1886
A major fire (Meiji 19) destroyed over 500 households in Fujitsukahama, but the brewery's No.1 kura survived after Masataro sealed its doors with miso to protect it from the flames; the scorch marks remain visible on its walls and beams today.
2024
A brewer (toji) with over 30 years at the kura became the brewery's 8th-generation owner.
